If you only have few days to spend in Rome you must try at least the following delicious specialties:
- Bucatini alla Amatriciana – thick spaghetti cooked with tomato sauce, jowl bacon (guanciale) and pecorino
- Fiori di Zucca fritti e ripieni – zucchini flowers stuffed with mozzarella and anchovies
- Spaghetti alla Carbonara – another famous pasta dish born in the area of Rome with eggs, pecorino and jowl bacon
- Carciofi alla giudia – deep fried Roman artichokes seasoned with pepper
- Carciofi alla romana – stewed artichokes seasoned with mint
- Porchetta – roasted port seasoned with herbs including myrtle and rosemary
- Tagliolini Cacio e Pepe – freshly made pasta with pecorino cheese and pepper
- Supplì – fried rice balls containing mozzarella and tomato sauce (rice, really in Italy? yes, Italy is the largest european producer of rice!)
- Puntarelle – Catalonia cicory season with anchovies and garlic
- Vignarola – soup with faba beans, green peas, artichokes
